Chicken Parmesan Sandwiches

Ingredients
- 4 boneless chicken breasts
- 4 sandwich rolls
- 1-26 ounce jar of your favorite marinara sauce
- 1 1/2 cups of all purpose flour
- 1 1/2 cups of italian style bread crumbs
- 3 eggs
- 8 ounces of mozzarela cheese(fresh or whole milk preferred)
- 1 teaspoon Salt
- 1/2 teaspoon pepper
- Hot sauce (optional)
- Fresh basil leaves (optional)
- Olive oil
Method
Step 1
Preheat oven to 425 degrees
Step 2
Empty contents of marinara jar into a sauce pan and heat.
Step 3
Grate (whole milk) or slice (fresh) mozzarela cheese
Step 4
Using a meat mallet pound the chicken breasts to approximately 3/8 inch thickness.
Step 5
Using empty pie tins or similar container set up your breading station.
Step 6
Mix flour, salt, pepper and place into the first pie tin
Step 7
Place eggs in the second pie tin and whisk until mixed well. Add a few dashes of hot sauce if you like it spicy.
Step 8
Place bread crumbs into the third pie tin
Step 9
Next dredge each chicken breast through the flour (shake off extra) then through the eggs (both sides)and then through the bread crumbs. Press the bread crumbs into the chicken to ensure they cover well. Place the coated breasts on a cookie sheet or cooling rack for 10 minutes to allow coating to adhere to the chicken.
Step 10
Heat olive oil in an oven safe skillet preferrably cast iron. Oil should cover the bottom of the skillet. Depending on the size of the breasts and skillet size you may need to use two skillets.
Step 11
When the oil is hot place the breasts into the skillet. Cook the breasts for approximately 3-4 minutes per side. Breasts may not be completely cooked through but will finish cooking in oven.
Step 12
Spoon a layer of marinara sauce on top of each breast and cover with cheese (place a couple basil leaves between the sauce and cheese if desired)
Step 13
Place skillet in preheated oven for approximately 5-7 minutes until chicken is cooked through and cheese is melted.
Step 14
Split sandwich rolls in half, butter the inside and toast inside down in a skillet or flat top grill until brown.
Step 15
Spoon marinara sauce in a thin layer on the top and bottom of each roll. Place a chicken on each roll.
Step 16
Serve with potato chips, french fries, or pasta salad
