- 4-5 cups shredded Chicken(small pieces) you can buy canned chicken in water (drain the water and shred with a fork) and use this instead.
- 4oz can chopped ortega chili(sounds weird I know, but is a nice secret ingredient)
- 4oz can chopped black olive
- Stock of green onion
- 1 green apple
- 1 red bell pepper
- ½ cup mayonnaise
Put the Chicken, Ortega chili and olive in a bowl and mix.
Put the Chicken, Ortega chili and olive in a bowl and mix. Chop up the green onion, if you haven’t done this before, you want to chop off the small root portion at the end and throw away. Then you chop the rest of the white portion of the onion and about 1 inch up on the green portion. Throw the rest of the onion away. Put the green onion in the mixture.
Now, core the apple and chop the good portion into small pieces and add to the mixture.
Take out the seeds of the red bell pepper and chop the remaining into small pieces and add to the mixture.
Add the mayonnaise and mix everything thoroughly together. If it still appears a little dry, you can add a little more mayonnaise.
This is good served in a sandwich or added as a scoop onto a nice bed of lettuce.
