Escalloped corn

Ingredients
- 1 large can whole kernal corn- drained
- 1 large can cream style corn
- 2 eggs
- 1/2 box Jiffy corn muffin mix
- 1 med green bell pepper- chopped
- 1 med onion- chopped
- 1/4 cup butter
- cheddar cheese
- sour cream
Method
Step 1
Brown the green pepper and onion in the butter. Combine corns, eggs, and muffin mix in a bowl. Then pour into an ungreased casserole dish. Spoon the pepper/onion on top of the casserole. Spread greated cheese over casserole and then dollop with sour cream.
Step 2
Bake at 375 for 30 minutes.
Step 3
I made this for Christmas dinner and the guys loved it.
