- 3 lbs Thinly slices turkey pastrami from the deli
- 1 Yellow onion
- 1 of each Red and green bell peppers
- 10 slices Pepper jack cheese
- 5 Sandwich rolls
Saute the onion and bell peppers in a large skillet(cast iron is our favorite at the station).
After a couple of minutes, add the turkey pastrami. Continue cooking on the stove top until tender.
On a cookie sheet, lay the rolls, open faced. Then, put the meat/onion/bell pepper mixture on one side of each roll. Cover with a couple of thin sliced pepper jack cheese and put under the broiler for a couple of minutes.
We like it with deli mustard or BBQ sauce. Easy, fast, and cheap- just the way we like it.
