Pulled Pork

Ingredients

  • 4 pound pork shoulder roast
  • 2 medium yellow onions
  • 1 white onion
  • 1 1/2 cups water
  • 2 16oz bottles of BBQ sauce(I like to use a more vinegar based sauce like stubbs original)
  • Sliced pickles
  • your favorite cole slaw
  • deli sandwich rolls(the ones that look like sub sandwich bread)

Method

Step 1

thinly slice one of your yellow onions. layer the bottom of a crock pot with half of the sliced onion.

Step 2

Place the pork shoulder on top of the onion slices. Layer the remaining half of the onion slices on top of the pork shoulder.

Step 3

Add the 1 1/2 cups of water. Place the lid on the crock pot and let cook on low for 12 hours.

Step 4

Once the roast has cooked for 12 hours, remove the lid and drain all of the juices and separate out the onion slices(as much as possible) and throw away.

Step 5

Now remove the pork roast and place on a cutting board. Take two forks and shred the now tender meat. Once the whole roast has been shredded, place it back in the crock pot.

Step 6

Take your remaining yellow onion and chop it up. Put chopped onion into the crock pot.

Step 7

Pour on whole 16 oz bottle of BBQ sauce into the crock pot. Mix the shredded pork, onion and BBQ sauce together. Place the lid back on the crock pot and let cook for 4 more hours. Stir about every 1/2 hour.

Step 8

Once the meat has finished cooking, thinly slice the white onion and place in a bowl. Place pickle slices in a bowl. Place cole slaw in a bowl. Serve the meal. Each person can make pulled pork sandwiches using the meat, white onion, pickle slices and yes even cole slaw(in the sandwich). The second bottle of BBQ sauce is to add additional flavor to the sandwich.
