Roasted Potatoes

Ingredients

  • 4-5 Baking Potatoes
  • ½ cup chopped red onion
  • 1 ½ tbsp Fresh Rosemary
  • 1 ½ tbsp Fresh Sage
  • Salt
  • Pepper
  • Olive oil

Method

Step 1

With the skin still on, quarter the potato. Then, quarter each quarter again. This will give you nice bit sized pieces of potato.

Step 2

Place the potatoes in a large mixing bowl. Add your red onion. Pour a generous amount of olive oil over the potatoes. You’ll want enough to coat the potatoes but not to much. Chop up your Rosemary and Sage and sprinkle over the potatoes. Mix up everything in the bowl. Spread the potatoes out on a cookie sheet.

Step 3

Salt and pepper the Potatoes.

Step 4

Preheat your oven to 400 degrees and bake potatoes for 1 hour. You can check to see if done by piercing a potato with a fork. If it easily goes in, the potatoes are done.
