Twice Baked Potatoes

Ingredients

  • 5 large baking potatoes
  • 10 slices of bacon
  • 1 ¼ cups sour cream
  • ¾ cup of milk
  • 5 tbsp butter
  • ¾ tsp salt
  • ¾ tsp pepper
  • 1 ¼ cups shredded cheddar cheese
  • ½ cup chopped green onion

Method

Step 1

This takes the baked potato to a whole new level. It’s a pretty simple dish but makes it seem as if you’re an expert in the kitchen. Bake your potatoes in the oven for an hour at 350 degrees.

Step 2

In the meantime, fry up your bacon, crumble and set aside. Once the potatoes are done, remove them from the oven and let them cool for 10-15 minutes.

Step 3

On the top of the potato, cut a large oval shaped opening. Now, this next step is the most difficult step. With a spoon, scoop out the meaty part of the potato and put it in a mixing bowl. Be very careful here to not ruin the skin. You will need the skin, so set it aside.

Step 4

Add the sour cream, milk, butter, salt and pepper to the bowl. Mix these ingredients with a mixer until it is creamy. If needed, you can add a splash or two of milk.

Step 5

Now, scoop the mixture evenly back into the potato skins. Sprinkle an even amount of cheese, bacon and green onion on to the top of each potato.

Step 6

Place each potato on a baking sheet and return to the oven baking at 350 degrees for another 10-15 minutes.
