Cheesy Meat Loaf

Ingredients
- 1 1/2 lbs. ground sirloin or ground turkey meat
- 1 lg. egg, lightly beaten with a fork
- 3 oz. sharp cheddar cheese, diced into very small cubes
- 2 T. grated parmesan cheese
- 1 T. prepared horseradish (optional)
- 1 T. Dijon mustard
- 1/4 c. fresh parsley, chopped (or 2 T. dried parsley flakes)
- 3/4 t. dried oregano
- 1/4 t. kosher salt
- 1/4 t. black pepper
- 1/2 C. breadcrumbs
- 1 C. sweet onion, diced
- 2 cloves garlic, minced
- 1/2 C. catsup (divided)
- Canola Oil cooking spray
Method
Step 1
Preheat oven to 350 degrees.
Step 2
Spray pan with canola oil spray. Saute onion until somewhat soft.
Step 3
Add garlic and saute 30 more seconds or so.
Step 4
Add onion/garlic mixture to breadcrumbs.
Step 5
Combine with 1/4 cup of the catsup and the remaining ingredients. Mix well.
Step 6
Shape into loaf - place in prepared pan and brush evenly with reserved 1/4 cup catsup
Step 7
Bake in preheated oven 1 hour to 1 hour, 15 minutes.
