Ingredients

  • 2-3 pounds beef flank steak
  • Marinade
  • 2 ½ cups Beer (I prefer a Mexican style beer)
  • ¼ cup lime juice
  • ¼ cup lemon juice
  • 4 cloves of garlic crushed
  • 1 medium onion sliced or coarsely chopped
  • 1 tbsp ground black pepper
  • 1 tsp ground cumin
  • 1 jalapeño pepper seeded and chopped
  • ½ cup chopped cilantro
  • 2 tbsp packed brown sugar

Method

Step 1

Combine all of the ingredients for the marinade. Place the steak and the marinade in a large plastic bag. Shake well so that the marinade coats the meat. Place in the fridge for at least an hour, overnight is best. Now it ready to BBQ. The flank steak is thin, so don’t over cook it. Maybe 2-3 minutes on each side on a medium-low heat. Season with a course salt when it’s on the grill. You can eat it like a steak or slice it up and throw it in tacos. A can’t miss meal.
