Ingredients
- 1 pound bacon browned
- 4 pound pork browned
- 4 pound steak browned
- 2 pound sausage browned
- 1 pound ham browned
- 2 large green pepper browned
- 2 pound onions browned
- 12 ounce red beans heated
- 1 box minute rice cooked according to pkg directions
- 2 pound tomatoes minced
- 12 ounce hot salsa
- 8 ounce shredded cheese
- 10 8 inch flour tortillas
- 2 large cast iron skillets
Method
Step 1
In #1 cast iron skillet, fry bacon first; remove bacon but leave grease
Step 2
Fry susage next; remove sausage but leave grease
Step 3
Fry pork next; remove pork but leave grease
Step 4
Fry steak next; remove steak but leave grease
Step 5
Spices to use are, garlic powder, cumin, seasoned salt, pepper. these are to be added to meats while cooking.
Step 6
Remove as much grease from meats as possible, Combine and set aside
Step 7
In #2 cast iron skillet cook onions, and,green peppers.
Step 8
In another kettle prepare rice according to directions on box; add red beans.
Step 9
On a plate, place 1 tortilla, then layer of meat mixture, onion and pepper mixture,raw tomatoes, salsa, and cheese
Step 10
Roll tortilla and secure with toothpick. Spoon rice and beans on the side of the plate.
