Garden Poached Lemon/Pepper Salmon

Ingredients

  • 4 - Single portion salmon filets (de-boned & skinned)
  • Bunch of cilantro
  • Yellow onion
  • Container of sliced mushrooms
  • Roma tomato
  • Cloves of garlic (minced)
  • Tsp. crushed red pepper
  • Tblsp. butter
  • Lemon pepper seasoning

Method

Step 1

Start by sautéing the butter, mushrooms, garlic and crushed red pepper.

Step 2

Cut 4 pieces of foil big enough to wrap fish and ingredients to poach.

Step 3

Preheat oven to 350 degrees. Chop cilantro. Dice the tomatoes

Step 4

Peel and quarter the onion.

Step 5

On each foil pieces lay a bed of onion slices, place a piece of cleaned, skinned and rinsed salmon on each bed of onion and sprinkle with the lemon pepper to your liking.

Step 6

Place equal amounts of the sautéed mushrooms on each piece

Step 7

Sprinkle desired amount of cilantro and then tomatoes on the fish

Step 8

Once complete wrap fish with remainder of foil to keep air tight.

Step 9

Place on baking sheet and place in the center of a 350 degree oven for 30 minutes.

Step 10

Note: When cleaning the salmon for best results remove the blood line in the meat. Serve with your favorite rice and vegetable.
