Mike’s Big Easy Jambalaya

Ingredients

  • 2 lbs. Chicken (cubed)
  • 2 lbs. Kielbasa
  • 1 lb. Shrimp
  • 1 diced onion
  • 2 red bell peppers
  • 2 green bell peppers
  • 28 oz. Can petite diced tomatoes
  • 2 cans of El Pato
  • Small can of diced jalapeño
  • Flour
  • A-1 steak sauce
  • Box of instant brown rice

Method

Step 1

Brown chicken in large pot with vegetable oil

Step 2

Once chicken is browned, then throw in onions & peppers

Step 3

At this point start the rice (follow directions on the box).

Step 4

Let onions & peppers simmer with chicken for 3-5 minutes

Step 5

Next throw in chopped chucks of sausage just long enough for the sausage to heat up

Step 6

After sausage is heated, reduce down with 1&1/2 cups of water mixed with 4 tbsp. flour

Step 7

Add diced tomatoes, El Pato and diced jalapeño (optional).

Step 8

Add approximately 5-6 oz. of A-1 and tabasco to taste

Step 9

Add cooked brown rice and let simmer for 5-10 minutes

Step 10

Add shrimp right @ the end for 1-2 minutes prior to serving. Enjoy!
