Ingredients

  • 5-6 lbs boneless skinless chicken thighs
  • Marinade
  • 1 tsp ground black pepper
  • ½ cup lime juice
  • ½ cup orange juice
  • 1¼ tbsp ground cumin
  • 1¼ tbsp white wine vinegar
  • ½ cup olive oil
  • 1 cup chopped onion
  • ½ cup chopped cilantro
  • 2 tsp sea salt or Kosher salt
  • 4 small dried red peppers
  • 4 cloves garlic

Who doesn’t love Pollo Asada? Here is a recipe for your next tailgate party or your backyard BBQ. The first thing you want to do is crush the garlic. Next, place all the ingredients for the marinade in a blender and blend for approximately 30 seconds to a minute. Lastly, place the chicken and marinade in the large plastic bag and mix together. Place the bag in a fridge and let chill overnight. Ok, your chicken is ready for the BBQ!!!
