Ingredients

  • 6 Bell peppers (any color and size)
  • 1 /2 lb lean ground meat
  • 1/2 yellow or spanish onion (diced)
  • 1 cup of cooked spanish or yellow rice (or any rice you choose)
  • 2 large cloves of garlic (diced)
  • 1 cup of marinara sauce
  • 2 small jalapeno peppers (diced)
  • salt and pepper to taste
  • 1 bag of baby spinach
  • 1 handful of bread crumbs and parmesan cheese

Method

Step 1

Preheat oven to 425

Step 2

Cut the tops off the peppers, removing all the seeds and linings of the pepper. Dice the pepper tops and set aside. Season the peppers with salt and pepper as well as EVOO (extra virgin olive oil). Place peppers in a deep oven dish and set in the oven for 40 minutes.

Step 4

Place your ground meat in a skillet and brown, drain and set aside. Coat the skillet w/ EVOO and saute' the peppers, onions, garlic, jalapeno peppers til onions and garlic are carmelized. Add the rice and the meat mixture. Cook ingredients down and add the spinach and rice. Cook down til spinach cooked. Add marinara sauce and combine all of the ingredients. Once the peppers are done, remove from oven. Stuff the peppers with the mixture and top with parmesan cheese and bread crumbs. Return to oven. Cook another 15 minutes or until the cheese and bread crumbs are golden brown. Serve either with vegetables or pasta of your choice. Enjoy

    Is the baby spinach chopped or shredded? Or just left whole?

      It’s a recipe submitted by another guest of the site so I’m unsure. By the looks of his directions the spinach is left whole. Come back on when ur done trying the recipe and let us know which way u choose to make it and how it turned out. What part of the country are u from?
